Grilled Chicken Skewers with Peanut Sauce

If you’re looking for a flavor explosion in your mouth look no further. These Grilled Chicken Skewers are phenomenal and have some of the best flavor of anything you’ll pull off the grill all summer. The key is to make sure to utilize the full marinade time. Not only will the flavor infuse into the meat but it will make for more tender bites of perfection as well. While the chicken is indeed fantastic, the star of the show is the delicious peanut sauce to accompany. With a quick dunk of your chicken into the peanut sauce you’ll be well on your way to dancing in your chair at the dinner table with each bite!

Ingredients

1 1/2 lbs. chicken breast, grilled, skinless, boneless, cubed

For the Marinade:
1 tbsp sesame oil
1 tbsp honey
2 tbsp soy sauce
1 tbsp minced garlic
2 tsp ginger root, grated 

For the Peanut Sauce:
2 tbsp fresh lime juice
1/2 tbsp honey
2 tbsp liquid aminos
1/2 cup Peanut Butter & Co Original Peanut Powder
1/4 cup water + 2 tbsp 

For the Garnish (optional):
1 tbsp cilantro, chopped
2 tbsp peanuts, chopped 

Directions

  1. Add all ingredients to a small bowl & whisk until smooth. Add additional water if a thinner consistency is desired. Pour sauce into a glass dish or jar, cover and refrigerate until ready to serve.

  2. Whisk together soy sauce, sesame oil, honey, vinegar, garlic and minced ginger. Place chicken cubes in marinade, cover, refrigerate, and let sit overnight or at least 4-6 hours.

  3. Thread skewers with marinated chicken cubes and refrigerate while heating the remaining marinade. Pour the remaining marinade into a small sauce pan, bring to a boil, reduce heat and simmer until thickened.

  4. Lightly oil grates of grill, grill pan, or skillet with cooking spray, and turn to medium-high heat. Once hot, add skewers and cook for about 3-4 minutes per side, or until chicken is cooked through and lightly browned, basting with the marinade as it cooks.

  5. Serve with peanut sauce & garnish with cilantro & chopped peanuts if desired.
